New developments: Lemonade recipes based on microemulsions of CO2 extracts

There is another novelty in our range – seven lemonade recipes based on microemulsions of CO2 extracts. Some of these formulas are improved versions of previously introduced products, others are entirely new developments presented for the first time.

Lemonades turned out to be very rich and tasty, distinguished by novelty and originality against the background of a boring assortment of traditional items.

If you are unable to visit the exhibition – it doesn’t matter, you are welcome to have all items for tasting sent to you by email. It is best to order a development kit at the same time so that you can recreate any recipe and adapt it to your taste if necessary.

Like all products based on CO2 extracts, our new lemonades are not only tasty, but also healthy – even more useful than ordinary products based on CO2 extracts, since all new recipes contain several different types of extracts that complement each other and the Improve the effect of all other ingredients. This circumstance can (and should) be used in advertising, for which a separate article with a detailed description of the functional properties of these new products will appear a little later. And in this update you will find short descriptions of the most important commercial properties of the new lemonades.

Note: Technological instructions for the production of lemonades based on microemulsions of CO2 extracts can be found at the Part 1 and Part 2 links.

  • Anniversary

Ingredients: cardamom, mint, lemon balm, lemon zest, juniper.

Description: a light soft drink whose bouquet gracefully blends the taste and smell of freshly fragrant herbs, citrus notes and the associated tart coniferous tones. Lemonade “Yubileyny” is by far the most successful and best-selling lemonade in our range (in which it has been present for a year), having won the “Public Award”. In her new version, she has become even more concise and saturated.

  • Olympic (Olimpiysky)

Ingredients: Siberian fir, eucalyptus, laurel, lemon peel, St. John’s wort, eleutherococcus, licorice root.

Description: Olimpiysky drink is a direct descendant of the legendary Soviet Baikal lemonade, its direct connection is emphasized by the name (“Baikal” was developed as “our answer to Pepsi-Cola” for the Moscow 80 Olympics). The composition of the ingredients is completely consistent with the original recipe and does not contain a single substitution (in numerous modern versions of Baikal, substitutions are very common – for example, St. John’s wort extract is replaced with a cheaper tea extract, and cardamom is often used instead of bay leaf; benefits the drink).

However, it would be wrong to regard “Olimpiysky” as a blind copy of “Baikal”, because despite the formal correspondence in name of all herbal ingredients, there are also clear differences between these two drinks. The most important among them is that the original recipe of “Baikal” was built on the basis of essential oils, while “Olimpiysky” contains extracts that are broader and richer in composition than essential oils. Thanks to a wider (and undamaged) extraction matrix, CO2 extracts turn out to be more useful than essential oils in terms of their properties, but they differ from them not only in this, but also in taste – hence the Olimpiysky drink, although similar to the original Baikal, but still has its own twist (as well as its own useful features, more so than the original version).

In addition, the Olimpiysky drink will be lighter than Baikal in the recommended parameters, since it contains less sugar, and it also contains less concentrate of seven extracts – modern consumers prefer lighter drinks, which is reflected in most focus groups of participants who are one of the less preferred saturated versions of the proposed drink, was confirmed. Thus, the Olimpiysky drink is a further development and revision of the Baikal theme, its more modern version, made on the basis of more advanced technologies and adapted to the changing tastes of customers (but at the same time, if you want to make a drink that suits the taste of the original “Baikal” as close as possible, then there is also such an opportunity – just ask us and we will tell you how to do it).

  • Steppe (Stepnoy)

Ingredients: wormwood, fennel, sage, mint, sweet flag.

Description: The “Stepnoy” drink is undoubtedly the most original novelty in our range. This lemonade, made on the basis of extracts of wormwood and fennel, has a pleasant and spicy-bitter taste, which allows it to be positioned as a softer, more refined and richer analogue of the popular Schweppes brand. This drink has another ancestor – that’s absinthe, the legendary drink from the golden age of Parisian bohemianism. This drink has many versions, among which we identified the main core, which remains unchanged from one variation to another – this composition was put on the lemonade base. At the same time, the proportions of the ingredients have of course been significantly revised in order to harmoniously combine with the alcohol-free base. Therefore, the taste of Stepnoy lemonade, although similar to absinthe, is very distant.

In the focus groups, it was this lemonade that, with its originality of taste, caused the greatest “wow effect” among the participants surveyed, so we recommend paying special attention to it.

And to anticipate a possible question – the level of thujone (a substance contained in bitter wormwood extract and believed to be the cause of a certain hallucinogenic effect that absinthe once possessed) in Stepnoy lemonade exceeds not the legal limits of the Russian Federation.

  • Ginger

Ingredients: Ginger, Lavender, Mint, Lemon Balm, Cardamom.

Description: Ginger is popular and well-known among people, but despite the high demand for good ginger sodas, there are very few on the market due to the difficulty of obtaining a quality water-soluble ginger concentrate – the main ingredients responsible for the taste and smell of these plant are responsible are not water soluble. However, with the help of water-soluble microemulsions of CO2 extracts, this problem is easily solved, because with them you can add a concise and fresh taste of ginger to any drink without any tricks. In the lemonade recipe, ginger extract “Ginger” is included in the “frame” from a number of other extracts that combine well and complement each other in terms of taste. Because of this, the overall taste of the drink turned out to be interesting and varied, with lavender notes that were unexpected for ordinary users. It is recommended to drink in small sips, so that the taste of ginger can be felt well, but it does not cause burning.

  • Lugovoy

Ingredients: chamomile, cornflower, linden blossom, sweet clover, mint, lemon balm, cardamom.

Description: The bouquet of the Lugovoy drink contains the taste and aromas of the most fragrant meadow herbs and flowers, the fresh taste of which is well emphasized by the spicy and honeyed notes of sweet clover and cardamom. Lemonade “Lugovoy” is the “summer resort” that is constantly talked about in advertising, but these promises are rarely true. Everything in our product fits together – it is made on the basis of CO2 extracts, which store all the fresh and beneficial properties of summer all year round. The taste and aroma of the drink turned out to be very successful and was highly appreciated in the focus groups. Also in terms of its beneficial properties, this is perhaps the most powerful drink among all the new products presented.

  • Juniper

Ingredients: juniper, sage, mint, cardamom.

Description: “Juniper” lemonade is a long-lived veteran of our range, which has been given an even “stronger” juniper flavor in its new version at the request of users. At the same time, the “frame” of other extracts has also been redesigned, which in the new edition has become more precise and concise, well emphasizing the taste of the main ingredients (juniper and sage), but not interrupting it. Interesting for marketers: Despite its apparently “male” character, the juniper drink turned out to be popular with women in particular.

  • Garden

Ingredients: rose, lavender, chamomile, sweet clover, oregano, thyme, mint, lemon balm, cardamom.

Description: The idea of the “Garden” drink is to collect everything that can be collected in and around a blooming garden and make lemonade from that. The taste turned out to be very original and incomparable, since this drink is actually a mix of different ingredients, which, however, despite their heterogeneity, formed a harmonious and pleasant composition with an exquisite smell.
