Butter with CO2 extracts

Butter is a widespread product and on the one hand quite conservative – the most important and best-selling variety is the butter itself, as it is, with no additives. On the other hand, there are also established variations of butter on the market with various additives – for example chocolate butter, herring butter, caviar oil or dill oil.

We should deal with dill oil separately – market research shows that this position is of interest to many consumers, as it is associated with ‘healthy’ and ‘natural’. However, with certain implementations of this product in the market, buyers are often disappointed because the taste of dill is faintly felt in them. This is not surprising, because either herbs or dill seeds are used as additives in such products, which badly accentuate their taste when added to butter.

A completely different result can be achieved if you add CO2 extract from dill or the composition of CO2 extracts “With dill” (dill, caraway, bay leaf). The extracts are evenly mixed into the entire mass of the product and give it the characteristic and immediately recognizable taste of dill, the disclosure of which does not require any additional measures (such as heating). Even cold, straight from the refrigerator, such an oil has a pronounced taste and smell of dill.

You can also produce other types of butter based on CO2 extracts or combinations thereof. Preliminary focus groups have shown that the oil with the herbal extract compositions “Provence Herbs” and “Hot Paprika” is well known by consumers. You can also offer pepper oils with the leading taste of black pepper (with the addition of CO2 extract from black pepper or mixtures “pepper” or “4 paprika”). Another promising direction are oils with dessert spices (cardamom, lemon and orange peel, cinnamon, cloves) for desserts, confectionery and baked goods.

From the consumer’s point of view, butter with a herb and spice flavor is a practical product – you can use it to give a variety of dishes such as mashed potatoes, porridge, pasta, pasta sauces, pancakes, and others a light, pleasant aftertaste. Or just conjure up a delicious sandwich.
