New developments: Spice mixtures based on CO2 extracts

A significant addition has appeared in the line of ready-made mixtures from the company Biozevtika – 6 new recipes for spice mixtures based on CO2 extracts. Flavor combinations are created on the basis of the most popular and well-known compositions of dry spices, and the price segmentation of new products is built in such a way that among them there is an option for use in products of any price category from economy to premium.

The main purpose of the new blends is to give our customers the opportunity to quickly and easily update their product to make it more complete and tastier, without spending time developing flavor combinations and developing new technologies. Therefore, only the most proven and popular flavors are selected for the new line of spice mixes, which are known to only make any product better. And at the same time, technological innovations are not provided either, the mixtures are supplied in any form convenient and familiar to the customer – fat-soluble, water-soluble or on a dry carrier.

A prime example of using new mixtures is the replacement of mono-extracts (mostly black pepper) in the recipes or a simple composition of extracts with a more complex and tasty mixture. This allows you to add a stronger touch to your product without long delays, making it more useful and, in some cases, even cheaper. The use of the presented mixtures also opens up a number of new possibilities, in particular for more precise positioning of your products for national cuisines, for example Caucasian (Georgian) or European (Italian or French) – with the help of a correctly selected composition of extracts, you confidently emphasize the national flavor of your dish, which should sound rather monotonous and not so convincing without spices.

  • Four peppers with fragrant herbs

Ingredients: black pepper, red pepper, allspice, white pepper, composition of aromatic herbs.

Description: This mixture is positioned as a direct alternative to black pepper – it is not inferior to black pepper in terms of pungency and bitterness, but has a broader and richer taste (with predominantly peppery notes) and at the same time it is significantly cheaper than black pepper. With the same application rate as black pepper in the final product (approx. 40g per tonne) and replacing black pepper with a mixture of “4 peppers with fragrant herbs” you get a better result at a lower price.

  • Herbs of Provence

Ingredients: thyme, rosemary, savory, oregano, basil.

Description: Herbs de Provence is one of the world’s most popular spice mixtures with a wide range of variations. However, among them we have selected the strictest and most classic version, patented in 1965, consisting of 5 ingredients – exactly those and in exactly the proportions in which they are present in the presented new blend. Thus, the Herbs de Provence mixture is a strict classic of taste, without compromises and substitutes for cheaper analogues. Accordingly, this mixture turned out to be the most expensive of all the innovations presented in terms of price. 

The spicy blend “Herbs of Provence” is ideal for products in the middle and upper   price segment that have a pronounced Italian-French taste. For example, it is perfect as a flavorful ingredient for minced meat for products such as ravioli or lasagne. It can also be used as a flavoring additive for sauces, oils, salad dressings and many other products.

  • Bouquet Garni

Ingredients: parsley, bay leaf, thyme.

Description: The “Garni Bouquet” extract blend, like the previous blend, is implemented in the most rigorous and classic version of the three ingredients. Since “Garni Bouquet” is actually a soup set made of fragrant herbs, the most direct area of ​​application of the Garni Bouquet extract mixture is also products that are consumed in liquid form – soups, soup sets, instant products. In addition, this mixture can act as a cheap alternative to herbs de Provence.

  • Italian herbs

Ingredients: Cilantro (coriander), parsley, thyme, rosemary, savory, oregano, basil.

Description: In terms of cost and functionality, this mixture lies between “Herbs of Provence” and “Garni Bouquet”. Designed for use in cases where Herbes de Provence have proven too expensive for your product and Bouquet Garni is not rich enough in flavor.

  • Khmeli Suneli

Ingredients: coriander, fenugreek, paprika, composition of aromatic herbs. 

Description: The Khmeli-Suneli spice mix is ​​one of the hallmarks of Georgian cuisine, which is also widely known and very popular in Russia. This blend is made from extracts very close to the classic form and can be used to add colorful taste and smell to dishes like manti, khinkali, chebureks and many others.

  • Adjika (Ajika)

Ingredients: coriander, paprika, composition of aromatic herbs.

Description: In contrast to other new products, the taste of the “Adjika” extract mixture is only partially similar to its classic model. The reason for this is the purpose of this product, which is not to repeat the classic taste as closely as possible, but to respond to the ever-growing demand for ingredients formulated according to the “cheap and good” principle.

In fact, this spicy mixture is a well-chosen composition of the cheapest and at the same time rich-tasting extracts in our range, the use of which gives you a thoroughly convincing effect (hotness and spicy taste) in one fell swoop at a very low cost. It positions itself as an ingredient for products in the lower price segment, such as dumplings, meatballs, pies, canned vegetables and others.
